seared smoked sausage smothered in a creamy boursin sauce tossed with tender cannellini beans and kale hen topped with crunchy homemade mini croutons

If there’s one combo I’ll never get tired of, it’s pork and beans. It’s such a simple pairing that always delivers, no matter how it’s served. I was hungry for a quick and easy 30-minute dinner that only used a few dishes, so I turned to this tried-and-true combination to create this now Delish-favorite dinner. Seared smoked sausage is smothered in a creamy sauce made from shallots, garlic, chopped kale, and tender cannellini beans, then topped with crispy, crunchy homemade mini croutons to make this hearty skillet dinner.

It’s the perfect dinner to whip up after a busy day when you can’t fathom being in the kitchen for more than half an hour, but want something that is good enough to go back for seconds. Here’s everything you need to know:

The beans:
There are two secrets to this skillet dinner’s extreme creaminess. The first is in how you prep the beans. I typically rinse and drain my beans before adding them to the pot, but sometimes, the liquid in the can is exactly what you need to get a sauce that has the perfect spoon-coating texture. Rinse and drain just one can of the beans and add the other with the liquid from the can for the ideal saucy bean balance.

The boursin:
The second secret is a Delish shortcut fave—a good ol’ block of Boursin cheese (as seen in our Boursin baked ziti, our Boursin-stuffed mushrooms, and our Boursin omelet). Yep! Your go-to cheeseboard choice deserves a chance to shine during dinnertime. In development, I found I was partial to the classic garlic and fine herb flavor, but the shallot & chive flavor also yields a delicious (and slightly more oniony) flavor.

Storage:
If you have any leftovers, store them in an airtight container for around 3 days. I recommend storing the croutons separately, so they don’t get soggy.
