There are many ways I love to prepare chicken breasts, but the slow cooker has to be one of my absolute favorites. Chicken breasts, which have a bad reputation for drying out, stay nice and juicy when cooked low and slow. The best part? It’s SO easy to do. If you’re feeling lazy and need a hands-off dinner, then this is the weeknight meal for you.

To round out the meal and add flavor, I add potatoes, red onion, rosemary, and lemon. If you want to pack in even more flavor, throw in a few smashed garlic cloves and some extra herbs like thyme or oregano. You can also switch it up by adding sweet potatoes instead, using lime juice, and different herbs and spices, like cumin or chili powder.
