Brie is a rich, buttery, creamy cheese that’s a favorite in the Delish Test Kitchen and always makes a cheese board just a little more enticing. I’m always finding all of the many ways I can utilize brie, whether it’s baked in pastry, melted into a quesadilla, or used as whipped dip. Then I discovered that, like my Parmigiano rinds, I could actually turn brie into quick, easy crisps for a go-to snack or last-minute appetizer. All you need is brie, 5 minutes, and a microwave—it truly is as easy as it sounds.

Keep in mind that you can’t use just any type of brie when you’re out shopping: When I was testing, I wasn’t sure what type of brie to use. I tried microwaving all of the different varieties, including double- or triple-cream brie. Each time, I ended up with melted brie. For this recipe, you need to find “standard” brie that’s young and firm. The longer the brie ages, the softer it becomes. The more fat in the brie, the more likely it is to melt. With the right type of brie, you’ll have these fun, crunchy snacks ready to go in just minutes!
