Best Bacon Weave Breakfast Sandwich Recipe

While there’s no one right way to make an on-the-go breakfast sandwich, the best ones always have bacon, egg, and cheese. What’s better than a bacon, egg, and cheese? A bacon, egg, and cheese with even more bacon! Here, a sunny-side-up egg topped with melted cheddar cheese and a golden-brown hash brown sandwiched between two slices of woven pieces of crispy bacon makes me question if we really even need bread for a breakfast sandwich. Here’s everything you need to know.

The bacon weave:
In this recipe, we take our method for cooking bacon in the oven and weave bacon strips instead. Cut each piece of bacon in half to create 24 pieces, then, to weave the bacon, place three strips side by side. Next, similar to a lattice pie, fold the outer pieces and place another bacon piece on top of the middle slice. Fold back the outer pieces and fold up the middle piece. Place another piece of bacon on top and repeat a third time. This will create a square-shaped three-by-three bacon weave. This recipe yields four bacon weaves for a total of two sandwiches.

Assembly:
Top the bacon weave with a fried egg and a hashbrown patty. Depending on your preference for sunny-side-up eggs, see our guide for tips on how to fry an egg. While the bacon and egg have plenty of flavor, be sure to season your tomato slice with a sprinkle of salt and pepper to really make it pop.

Storage & make ahead:
The bacon weaves can be assembled up to 1 day ahead. Arrange them on the foil-lined baking sheet and wrap the pan with plastic wrap, then refrigerate until you’re ready to make the sandwiches.
