With tangy goat cheese, roasted beets, creamy avocado, and toasted walnuts, this is the epitome of a winter salad. Beet lovers—get ready to meet your new favorite side dish.

Be sure to use fresh beets; the canned version won’t cut it here. If you really want to be a bit extra, toast your own walnuts. We love arugula for its peppery bite, but feel free to swap in whatever salad green you like. Not a fan of goat cheese? Use feta instead—this salad is extremely versatile.
