!Spoiler alert! If you load a fork with a bite of garlic-herb butter roast chicken, crispy roasted potatoes, tender, sweet carrots, and a smear of balsamic reduction, you will experience perfection. This meal was inspired by a scene in season 2 of Netflix’s murdery, psychological thriller You. I made this right after it aired to cement my status as a superfan of the show… and have made it over and over since. The hardest part is the spatchcocking of the chicken, so I laid out my top tips below. Once you’ve got that down, you’re on your way to a meal that ALWAYS impresses.

Spatchcocking a chicken sounds a lot harder than it is. Here’s how to do it: Simply flip the bird so it’s breast side down, use a pair of sharp kitchen shears to snip up the left and right side of the spine, then remove the spine completely. Flip the bird back over so the breast side is facing up. Using the palm of your hand, press into the center of the breast, kinda like you’re giving it CPR, until you hear the breast bone crack and the bird is lying flat. If you have trouble getting the bone to crack, flip the chicken back over and use a sharp paring knife to score the breast bone, making it easier to break.

With this method, the breast and thighs will cook to their respective doneness in the same amount of time, resulting in juicy chicken breast and fully cooked legs and thighs. In a world where “you can tell everything about a cook based on their roast chicken,” this method will make you look like a culinary rockstar.
