
When I can’t decide what to make on any given weeknight but need something warm, comforting, and satisfying, I always turn to a tamale pie. While I love our classic ground beef recipe, this chicken tamale pie gives it a run for its money. Something to note: If you go searching for tamale pie recipes, you’ll find that many come with the cornbread layer on top. I’ve tried both, but I strongly feel that it should be the base for your hearty layers. This simple, flavor-packed cornbread provides the perfect base for shredded chicken, enchilada sauce, and plenty of melty cheese.
Instead of making a batter from scratch, I doctored a box of muffin mix with some sour cream and canned corn. The result is just as delicious, but way easier. I highly recommend it for the easiest possible dinner, but if you prefer to make it homemade, check out our homemade cornbread recipe.
