Does anyone remember those iconic Philadelphia Cheesecake Snack Bars from the early 2000s? Well, I do, and I’ve missed them ever since they were discontinued—that’s why this copycat recipe was born. Not only do these bars look exactly like the iconic snack, but they also taste just like I remember: a buttery graham cracker crust, creamy cheesecake, a sweet strawberry jam, and a white chocolate drizzle. Whenever I need a shareable dessert or just an extra-sweet snack to pick me up, I’ll be making these copycat cheesecake bars.

These bars do need to be refrigerated for quite a while to set up, making them an ideal make-ahead dessert. You should let them chill for at least 3 hours, but you can leave them up to overnight. The next day, simply slice and serve!
