What’s better than a cinnamon roll? Almost nothing. Oh, except a cinnamon roll stuffed with warm, spiced apple pie filling. These apple cinnamon roll hand pies are a cross between a homemade apple pie and your favorite breakfast treat, making them the ultimate comfort pastry, perfect for fall. Just imagine the smell of fresh-baked apple pie AND cinnamon rolls warming the air inside. These are simple enough for busy mornings or cozy afternoons in, but impressive (and delicious) enough for the holidays. To make things even easier, I used Pillsbury cinnamon roll dough to avoid the headache of homemade dough. Plus, it provides a perfectly fluffy, cinnamon-y crust.
While there is nothing better than a warm, fresh-baked pastry, a leftover pastry is a close second. These baked hand pies can be stored in an airtight container in the refrigerator for up to 2 days. For best results, reheat them by placing them in a 350° oven for 10 minutes. Because it’s so simple—and a big part of that classic cinnamon roll feeling—you may want to make some extra fresh icing while they reheat.
